Last Minute Fine Dining

15min time |Zoodle Salad | Coconut Beetroot Soup | Fresh Garlic Bread

There are moments in life when you have absolutely no time to prepare a proper meal.

Maybe you are working too much and you have unexpected guests?


Or you are a student with a low budget?

Maybe you discovered cooking for yourself? And you want to impress a very special guest?


Then these quick and easy recipes will save you from serving ready-made pizza!

Zoodle Salad for two

  • 1-2 Zucchini (wash properly as we gonna serve them raw and with the skin)

  • pinch of salt

  • dried garlic ( fresh garlic would be too strong and it is easier to spread it equally)

  • chili threads (for a spicy color addition)

  • potato peeler (unless you have zoodle maker you are happy with)


Peel & turn the zucchini


Peel and turn the zucchini as you see in the video. The more you turn it, the wider the zoodles will get. Peel until it gets difficult to peel the flesh. The leftover part you can keep in the fridge and use it the next day.



Add all spices

Now spread equally a pinch of salt and a pinch dried garlic on the zoodles. Now mix the zoodles properly...and that´s it!


Really....just place it nicely on a small plate and add some chili threads for the fine-dining-effect. And Voila!


Coconut Beetroot Soup for two

  • ready-made beetroot soup: 500ml (From where ever you are reading this, you will find for sure good tasting versions in a polish store nearby...In Poland we actually use this frequently)

  • coconut milk: 250 ml

  • pinch of dried garlic

  • fresh coriander for the decoration


Add all ingrediants together


Add the soup, the coconut milk and a pinch of dried garlic into your pot, stare it and heat it slowly on medium heat until it is about to boil.

Serve the soup in your bowl and garnish with fresh coriander and a drizzle of coconut milk, as you see in the video.


Fresh garlic bread for two

  • ready-baked baguette or bread, anything you find at home

  • ca. 3 tsp butter (depending how big your bread is)

  • 2 cloves of chopped garlic

  • dried oregano

  • pinch of salt


Add all ingredients to the baguette


1.Preheat the oven to 160-180 degrees C.

2. With a knife, slice your bread in an angle diagonally about 2/3 the way (do not slice all the way through) and once along with the baguette as you can see in the video.


3. Apply with a knife the butter on top and try to spread it in between the cuts.

4. Then spread on top the chopped garlic, salt, and dried oregano.

Bake for 6-8 minutes until it becomes golden brownish.
