Two-In-One Romaine Lettuce Recipes for the Grill Season

Vegetarian Grilled Romaine Lettuce | Fresh Persille Salad

The `grilling season` in Berlin has officially started and people like to invite spontaneously for #grillparties. This is why I am always looking out for fancy but simple vegetarian grill ingredients. Romaine lettuce, for instance, is my first choice. You can do so much out of it and in this blog entry I would like to share my two favorite dishes out of one pack of romaine lettuce.

Ingredients for 4 People:

2x Romaine Lettuce
Olive Oil | Salt | Pepper
2 Cloves Garlic | Parmesan
a bunch of Fresh Persille
1/3 of big Cucumber
2 tomatoes | small red onion
Avocado
Step One: Prepare the lettuce for both recipes
Follow the steps as in the video:
Take out the outside & detached leaves & crush them into small pieces for the salad
Cut 1/4 from the top of the lettuce & add as well to the salad bowl
Depending on the size cut the lettuce into halves or quarters.

1. Grill foil packages
Place two pieces of the cut lettuce on aluminum foil.
Spread chopped parmesan on top.
Close the packages such, that you can easily open those on your grill party and add the marinade right before the grill.
2. Marinade Process

I always carry to grill parties my marinade and dressing separately in a jar. Firstly nothing can leak, secondly marinaded salads keen to get mushy in the heat.
Add 4o ml olive oil, 2 cloves chopped garlic into a jar with a pinch of salt and pepper. Shake it and you are ready!
Add the marinade before the grill. Close the package and grill it for 10-15 min.

1. Dice all ingredients
Add to the lettuce finely chopped red onion, which will give a slightly spicy flavor. The mature tomatoes will give a hint of sweetness. While the avocado makes your refreshing salad more creamy. The cucumber and persille are going perfectly with the lemon dressing.

2. The Lemon Dressing
Add into a jar 20 ml olive oil and about 10 ml of fresh lemon juice. Now a pinch of salt and pepper according to your taste and Voila....your Two-In-One Romaine Lettuce Recipes for the Grill Season are ready!
